The shell is the emblem of the pilgrimage to Santiago de Compostela (Santiago means St. James) and state in general symbol for pilgrims. They brought this shell as proof of the end of their pilgrimage. The visible wear of the shell, on the hat or the coat sewn, gave protection against bandits, which the carriers of a code of honor left alone. Probably mainly because there's not much to get attacked by the pilgrims.
